Grain-Free Waffles (Packed with Healthy Fat & Protein)
I’m a waffle lover. Fluffy, crispy, Belgian waffle lover. All my health loving friends are always eating their waffles with protein powder and I just couldn’t get into the consistency. I needed that airy crispy waffle… not a spongy waffle.
Well my blog following friends… great news. This waffle doesn’t miss a beat-its just missing all those grains. Its low carb, and pretty protein rich WITHOUT protein powder. Can I get a woot woot?
Remember… as I shared with my pancake recipe. Lower carb & grain free means we are going higher fat with these waffles. Healthy fat of course but almond flour, coconut flour, & coconut oil are going to raise the fat & saturated fat contents of this recipe-but don’t fear fats they aren’t the problem, sugar is. Enjoy these delicious waffles…they will not disappoint.
Ingredients:
- 4 large Eggs
- ½ cup Low Fat Ricotta
- 1T. Vanilla
- ½ cup Almond Flour
- 3 tablespoons Coconut Flour
- ½ tsp baking Soda
- 1 tablespoon Coconut oil, melted
Directions:
- Place all ingredients in a bowl and use an immersion blender to blend & whip batter leaving no chunks- super important! If you do not have an immersion blender, no worries! You can throw it all in the food processor or blender and it will work just fine!
- Heat waffle iron and lightly spray with oil for the first waffle to avoid sticking. After the first one you won’t need to add more oil. Spoon batter into waffle iron, starting at the center. Batter will be thicker than regular waffle batter but will expand to fill most the iron.
I use a round Belgian waffle maker. You will get 4 waffles from this recipe.
