Here is a great warm breakfast for a chilly morning. Quiona (pronounced Keen-wah), is an amazing food that will give you some power to start the day! Most people consider it a grain but it is really a seed. Its is considered a whole grain, and a complete protein, meaning that it contains all 9 essential amino acids. I personally love to pair this with an egg or some turkey breakfast sausage. Enjoy ❤
Ingredients
- 1 cup uncooked quinoa
- 1 1/2 cups cold water
- 1 Tbsp butter, divided
- 2 large apples, chopped
- 1 tsp. cinnamon
- 1/2 tsp. apple pie spice
- 2 Tbsp brown sugar
- 1 cup unsweetened almond milk
Directions
- Cook 1-cup quinoa in 1.5 Cups water and bring to a bowl over medium-high heat, boil for one minute. Reduce heat to low and cover pan tightly, allowing quinoa to simmer for 10 minutes. When quinoa is cooked, remove from heat and fluff with a fork. {Quinoa should have a little tail that appears on each grain when done}
- Meanwhile, coat a large skillet with cooking spray and set over medium heat. When skillet is hot, melt 1/2 the tablespoon of butter and add your chopped apples. Cook about 5 to 10 minutes, until apples are soft and begin to caramelize, turning occasionally. Once cooked, reduce heat to low until quinoa is ready.
- When quiona is cooked Add remaining 1/2 tablespoon of butter, cinnamon, nutmeg, brown sugar and almond milk, stirring to combine.
- Fold in apples, sprinkle some extra cinnamon, and walnuts if desired on top and serve.
*Yields 6 servings. For my 21 day fixers, 1 serving would be: 1 yellow, 1/2 purple, & count 1/2 Blue if you add 2T. of chopped walnuts.
**To make this recipe dairy-free/vegan, substitute coconut oil for the butter. It will still be delicious!
I have not been able to eat quinoa as a sweet dish. I may have to try this recipe. It looks yummy! Thanks for the idea.
