Fall calls for comfort.
I was really wanting some soup, but I was desiring a creamy, rich and awesome option. I have made some pretty bomb tomato soup before ((with cream cheese…eeeek)) and I knew that it had no place in my post halloween candy binge recovery. I was messing around in the kitchen and out emerged this delicious, creamy, comforting soup. I made it in the slow cooker actually because I was home, but I gave you instructions for the stove top below. Slow cooking friends 2-4 hours on low will do the trick then stir in the ricotta until melted, add milk and blend. waaaaala!

If you are one of my 21 day fix friends this recipe is easily converted as I was following the meal plan myself when it I created this recipe. 1 green and 1/2 red for a 1.5cup serving. Use your blue and yellow to make yourself a half grilled cheese or 2 yellows if you want a whole sandwich. I find this combo goes really well with a half sandwich and a side salad. Need more protein?
