I’m a buffalo chicken lover.. actually even more than buffalo chicken I love eating that obnoxiously greasy far from “clean” buffalo chicken dip that you get a pot lucks and super bowl parties. Ya ya, I know I’m a nutritionist-we are all human 😉
Anyways…in my endeavors of adding more healthy slow cooker meals to my crazy life I thought I’d go for some buffalo chicken fun. This recipe is a crowd pleaser and the best news is the prep is less than 5 minutes. Once its done cooking you can be eating in 15 minutes. Sound good??
Here is the deal, before you deem my recipe “unclean” I need you to understand that cooking with a little butter is totally ok. I prefer you use *grass fed butter* and cook with small amounts instead of using the whole stick. Butter had great flavor AND the truth is butter (butyric acid) is actually beneficial to gut bacteria. It is an energy source for probiotics meaning it is considered a prebiotic.
Butter contains the highest amount of dietary butryic acid. It is a short chain fatty acid which helps decrease inflammation in the gut (helpful with IBS, chrons, ulcerative colitis etc.). Sooo long story short “lighten up” a little butter is a good thing.
What you need:
- 1-2lbs chicken breast
- 2tsp Original Red Hot/chicken breast (just hot sauce not buffalo sauce)*
- 1tsp Dried Chives
- 1/2tsp Ground Black Pepper
- 2tsp Onion Powder
- 2tsp Garlic Powder
- 2tsp Dried Parsley
- 1tsp Dried Dill
- 1/4tsp Himalayan Salt (sea salt is ok too)
- 2T Butter (I use grass fed)
- 3T Plain Greek Yogurt (I like to cook with FAGE)
- Hard Corn Taco Shells or soft whole wheat tortillas
- Cheese, lettuce, green onions, additional Red Hot for topping
*If you like your buffalo chicken really spicy you can bump it to 1T/chicken breast. If you get it too spicy just add a little more greek yogurt in the end to tame it down. You can also play if safe and top it with a few drops upon preparation for extra spice-and it looks pretty!
Instructions:
Place chicken, red hot, and seasonings in slow cooker. Cook on low all day if you are working away from home (if you’re at home it will be done in about 6 hours). Shred chicken, stir in butter and Greek yogurt. Let ingredients cook at least 15 more minutes to all combine. Assemble tacos with your choice of toppings (I used spinach, green onions, a little shredded cheddar, and a few drops of red hot). Enjoy!! And of course let me know how it turned out for you ❤
