To me there aren’t many things that beat breakfast treats that pair with a cup of coffee. I am a coffee lover and I also have a sweet tooth! I had some sweet dark cherries in the fridge and didn’t want them to go to waste so my mind started to drift to what treat I could bake with them. I’ve been experimenting with Greek yogurt a lot so I thought I’d mess around and try to bake a coffee cake with it….good news-it was a success!
Ingredients
- 1 cup fresh, pitted and chopped sweet dark cherries
- 3 Tablespoons Coconut Sugar
- 1/2 cup whole wheat flour
- 1/2 cup all purpose flour
- 3 Tablespoons Honey
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/8 teaspoon table salt
- 1 large eggs
- 1/2 cup plain Greek yogurt (I use 2% FAGE)
- 3 Tablespoons butter, melted
- 2 teaspoons vanilla extract
- 1/4 cup sliced almonds
Directions
In a bowl, combine chopped cherries and coconut sugar, set aside.
In a large bowl, combine the flours, baking powder, baking soda and salt.
In a small bowl, whisk the egg, greek yogurt, butter, honey and vanilla. Stir into dry ingredients just until moistened. Batter will be a little dense-don’t worry!
Divide the batter into two equal parts. Spoon half of the divided batter into a greased 8-inch round baking pans. Make sure to completely cover the bottom of pan, evenly spread it around that batter with a spatula. Top with cherry mixture. Spoon the remaining batter over cherries. Its ok if it doesn’t completely cover the cherry mixture-do your best. Sprinkle with almonds.
Bake at 350 F for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack for 15 minutes before removing from pan. You can take a knife around the edges while it cools to help from sticking.
Serves 8 yummy slices!
